About The Brew

Dark beer carries a certain expectation: roast. Coffee, char, burnt edges. The Czech take on a dark lager quietly ignores all of that. Tmavé pivo leans toward chocolate rather than campfire — a beer that’s dark in color and rich in malt but never harsh, finishing sweeter and rounder than its color suggests, with Czech hops keeping the whole thing in balance.

The style’s spiritual home is U Fleků in Prague, a brewhouse that has been making its dark lager since 1499 — and makes nothing else. Five hundred years of doing exactly one thing tends to sharpen the result.

Son of Dad is our answer to that. Ingredients came from five countries and four suppliers, which is not the economical way to build a beer, but it’s the right way to build this one. Fermentation runs cold and slow, with a proper diacetyl rest and a lagering period that ends when the beer says it’s ready — not when the tank is needed.
